I’m all about quick and easy meals, so I wanted to share this recipe I randomly whipped up and it tastes delicious! I am no chef in the kitchen, but over the years I am enjoying cooking for my family, trying new recipes, and adding in my own flare. This meal happened to unravel itself due to what we had left in the refrigerator and it is wife and husband approved! My daughter wasn’t so keen on it but being two years old she is still a picky eater at times. She had spaghetti noodles instead with a little bit of pesto!
Recipe:
Sicilian Italian Sausage (4) or use Italian Sweet Sausage, 1 green pepper chopped, package of grape tomatoes, couple handfuls of spinach, locatelli cheese (as much as you want), rigatoni noodles (1/2 pound), Pesto (2 tablespoons), Salt & Pepper (to taste)
Directions: In a skillet, saute sausages at medium heat (remove casings). Then add green pepper, spinach, tomatoes, and salt/pepper. Saute until spinach is wilted down, tomatoes have popped, and peppers have softened. Boil noodles, drain, and put in the skillet. Add pesto and cheese and enjoy!
